Friday Cocktails: The Blizzard

by J.S. on February 25, 2011

in Friday Cocktails

It’s cold and gross in LA and it’s my Birthday which means I should consume as many carbs as humanly possible, so all that being considered, this is the cocktail

Makes one cocktail

  • 1 1/2 ounces Irish whiskey or rum
  • 1/2 ounce hazelnut liqueur, such as Frangelico
  • 1/2 ounce Irish cream liqueur, such as Bailey’s
  • Hot coffee
  • Dollop of Grand Marnier Whipped Cream

  1. In a glass coffee mug, stir together whiskey, hazelnut liqueur, and Irish cream; top with coffee. Garnish cocktail with whipped cream and serve immediately.

Stuffed Tomatoes

by J.S. on February 21, 2011

in Recipes

I’ve never been a big fan of “stuffed” anything, but lately I’m changing my tune. These stuffed tomatoes are awesome. As always, you can make this vegetarian by omitting the sausage. It will be just as lovely.

Four tomatoes

1/2 cup cooked brown rice

3 cloves of garlic, minced

1 shallot, diced

1 sweet Italian sausage, casing removed, meat crumbled

1 yellow bell pepper diced

1 tbs parsley

1 tbs basil

Salt and Pepper

red pepper

Olive oil

Cheese for topping (I used a four cheese blend from Trader Joes)

Preheat oven to 375 degree. In a saute pan heat olive oil. Add sausage to pan and cooked through.

Add garlic, shallot and pepper to pan and cook until soften. Add salt and pepper and red pepper.

Turn heat off and add rice, parsley and basil.

Hallow out four tomatoes and fill with stuffing. Top with cheese and bake in oven until cheese is slightly bubbling.

I’m obsessed with this recipe. So Obsessed that I took a good slice into my finger and kept cooking. Suffer for good food. One amazing thing about this recipe is it’s low fat, low carb, low calorie (at least from what I know about fat, cals and cabs). For a vegetarian option exchange the chicken for Cod or Salmon or shrimp. It’s fast, it’s cheap, it’s amazing.

Boneless Skinless Chicken breast (as many as you want, Up to four for this recipe, double if adding more chicken)

1 bag of frozen artichokes

1 jar of sun-dried tomatoes in oil

1 leek, sliced

2 tbs olive oil

1 tbs butter

salt and pepper

garlic powder

onion powder

1 cup white wine

Heat oil and butter in a saute pan. Pound chicken breast and season with salt, pepper, onion powder and garlic powder.

When pan is hot add chicken and cook about 4 min on each side. Remove chicken from pan. Stir in artichokes, sliced leeks and sun-dried tomatoes. Cook until softened.

Add chicken back to pan. stir in wine and cook until liquid is almost gone.

Valentine’s Day Revelations

by J.S. on February 11, 2011

in Random Musings

Being married is kind of weird. I mean it’s great and I love it, but some days you notice it more than others. Some days something happens that makes you go, holy shit, I’m like really married. Today was one of those days. Today I got my Valentine’s Day gift. The husband is cleaning our place from top to bottom. Now, for those of you who are single you’re probably thinking, “wow, how lame, you must be pissed!” For those of you who are really married you are probably forwarding this to your significant other as a subtle hint as we speak. Pre-marriage, I would have wanted flowers, jewelry, all around shiny things, but now? Now a clean floor and an empty sink brings a tear to this poor girl’s eye. Here’s hoping you all have a clean house kind of Valentine’s Day.
