Chicken Fingers

These are pretty basic. We make chicken fingers a lot. You can be healthy and make them in the oven instead of a fryer, but I’m partial to the fryer.

This recipe makes enough for 8 people and left-overs.

6 boneless skinless chicken breast cut into tender size.

1 1/2 cups buttermilk

1 egg

1/2 corn starch

1 cup flour

1 cup panko bread crumbs

2 tsp garlic powder

2 tsp onion powder

hot suace

Salt and Pepper

Oil for frying

Directions: In a medium size bowl whisk buttermilk and egg together. Add a few dashes of hot sauce and set aside. In another bowl whisk together dry ingredients EXCEPT for corn starch. In a third dish add corn starch.

Drench the chicken in the corn starch then the milk then bread crumbs and drop into the fryer. Work quickly. The chicken should fry at 350 degrees for about 5 min.

Serve with your favorite sauces.

Poor Girl Mac n' Cheese

Yum, who doesn’t love mac n’ cheese? This looked prettier last night but you get the idea. When I make this I usually bake a big dish of it because I could and do eat it for days. Feel free to improvise on this too, change the cheese, add chicken, ham, peas, whatever you like.

A word about the measurements, basically I’m guessing. I tend to just throw things together until the taste good.

1 bag of small pasta. I used Fusili.

1 cup of milk. I used 1%.

1 bag

16 Oz of shredded sharp chedder cheese.

8 Oz. of shredded mozzarella cheese.

8 Oz. of munster cheese. I cut up a few pieces of sliced munster.

2 tbsp of flour.

6 tbsp unslated butter.

1 1/2 cups of bread crumbs

1 tsp nutmeg

parsley, salt, pepper

Preheat the oven to 325 degrees. Bring water  to a boil in a large pot, salt the water and then add the pasta. While the pasta is cooking make the cheese sauce. In a medium sauce pan combine milk and flour over medium heat. Stir with a whisk constantly. The milk will start to thicken. If it gets too thick add a little more milk. Once thickened take off the heat and stir in the cheese. When the pasta is done drain and add back to the pot. Stir in 3 tbsp of butter to the pasta then add the cheese sauce. Pour mac and cheese into a greased casserole dish bake for 15 min. After 15 minutes remove the dish and stir add the bread crumbs and continue cooking for 10 min. Then devour.

To make bread crumbs:

Combine remaining butter, bread crumbs and parsley in a saute pan and toast.

Soul Food Dinner Party

If this doesn’t make you drool, then I’ve got nothing for ya. I’m having a little “soul food” dinner party this weekend and I’m gearing up for it. I grew up in the South (well, Florida, but that’s still the South!) and we ate a good amount of southern food. The funny thing is I hardly ever make southern food so I decided now is as good of a time as any to do it. I’m thinking fried green tomatoes, fried chicken fingers, mac and cheese, biscuits, greens then wash it down with some Mylanta.

I haven’t even looked at the recipe and yet I know these are AH-MAZING. While I am frosting girl, all the way, the ganache on these cupcakes makes me drool. There, I said it. It’s friday night and I’m drooling over food porn. Stop judging me! So much for the circle of trust. Jeeze.
